chore: point the appcast at 1.0.0 

Checked against the App Store Connect API first, since announcing a
version before it is downloadable is the whole failure mode this file
has: iOS and macOS both report 1.0.0 READY_FOR_SALE.

The two trains are back on one number, so the flat legacy fields — the
only ones apps already installed know how to read — are unambiguous
again. Verified by decoding the file with both the old and the current
structure.
